食譜雜記的塗鴉簿  Beef Rib with Onion Sauce  (Mar 31, 24)

Bone-in or semi bone-in beef rib (about 2 pounds), trim off fat

Salt & pepper

For sauce:

Beef broth or chicken broth, 1/2 cup

red wine, 1/2 cup

One medium red onion or about 5 small shallots, sliced

1 tbsp raspberry jelly

1/4 tsp dried thyme

1 tbsp butter

To make sauce, medium heat to melt butter in a small sauce pan. Fry onion/shallots for 2 to 5 minutes to soften. Add wine and broth, jelly, and thyme. Heat to boil then simmer for 30 minutes until most liquid evaporated. Add salt/pepper/sugar/vinegar to adjust taste.

Pre-heat oven to 400F. Heat 1 tbsp butter in a small/medium frying pan over medium high heat. Fry rib for about 2 minutes each side to brown. Put pan with rib into oven to roast for 8 minutes, then remove from oven. Set aside for about 10 minutes then cut into pieces to serve with sauce.
